Serving for 4 - Ingredients

  • 1-1/2 pounds panfish fillets, rinsed (Perch/Bluegill or any other firm panfish)
  • Tequila Lime marinade (see below for recipe)
  • 1 lb. bag of coleslaw mix (no dressing) or finely grated cabbage
  • 1 cucumber (seeded) and chopped
  • 1 cup fresh chopped cilantro
  • Juice from two Limes
  • Salsa (see below for a homemade recipe)
  • 1 cup mayonnaise (not miracle whip)
  • Sharp cheddar cheese, shredded
  • 1 avocado, sliced OR Guacamole
  • 8 corn tortillas
  • Salt and pepper

Preparation and cooking instructions

Place washed fish fillets in large zip lock baggie with tequila lime marinade for at least one hour (the longer the better). Prepare toppings. In medium bowl, toss coleslaw mix, cucumber, ¾ cup cilantro and the juice of one lime and set aside. Mix mayonnaise with 1 lime and ¼ cup cilantro and refrigerate until ready to serve. Warm tortillas for 10-12 minutes in 325F oven OR panfry in canola oil until lightly browned. Heat two tablespoons of olive oil in a nonstick pan. Remove fillets from marinade and sauté the panfish for about three minutes per side, until the flesh is opaque. Do not overcook! Place two small fillets on a tortilla. Add cabbage mix, salsa, a dab of the mayonnaise dressing mixture, an avocado slice (or guacamole), and a little cheese.

Lady Loon Homemade Salsa

  • 6 finely chopped Roma Tomatoes
  • 1 finely chopped small onion
  • 1 finely chopped jalapeno pepper
  • ½ cup chopped fresh cilantro
  • Juice from one lime and one lemon
  • 3 cloves garlic chopped fine
  • Salt (to taste)

Tequila Lime Marinade

  • 1 cup tequila
  • 2 thin sliced jalapeno peppers
  • 1 finely chopped shallot
  • 3 finely chopped garlic cloves
  • ½ cup olive oil
  • ½ cup fresh cilantro leaves
  • Juice of 2 limes
  • ¼ cup honey
  • 1 tsp sea salt
